Ingredients

  • 1/4 pound lean beef (e.g., sirloin or ground beef)
  • 1 medium sweet potato
  • 1/4 cup water or low-sodium beef broth (optional)

Method

    Peel and dice the sweet potato into small cubes. Place in a steamer basket over boiling water and steam for 10-15 minutes until very tender.

    Steaming preserves more nutrients than boiling. Test tenderness with a fork—it should mash easily.
